KENTUCKY BOURBON BARREL ALE RIBS

Preparation:

  1. Mix the ingredients for the rib rub together and sprinkle liberally onto the entire rib rack.  Save any remaining rub for future use.
  2. Envelope the ribs in foil, place on a baking sheet, and bake at 300 degrees for about 2 hours, until tender.
  3. To make the sauce, combine all the ingredients in a small saucepan and simmer over low heat to reduce and thicken, about 10 minutes.
  4. Once the ribs are tender, peel back the foil to expose the ribs, brush the surface with the sauce and broil for 2-3 minutes to brown and caramelize the ribs, watching closely to prevent burning.

Ingredients:

Rib Rub:
  • 2 tbsp brown sugar
  • 1 tbsp paprika
  • 1 tsp chili powder
  • 1 tsp black pepper
  • 1 tsp cayenne pepper
  • 1 tbsp onion salt
  • 1 tbsp bourbon smoked salt
Sauce:
  • ½ cup bourbon barrel ale
  • ½ cup steak sauce
  • 2 tbsp sorghum or brown sugar
  • 1 tbsp Worcestershire sauce
  • 1 tbsp mustard
  • Pinch salt
