The
Legacy of Alltech's Lexington Brewing Company
The Lexington Brewing Company was established in 1794. Although
the brewery's name has changed back and forth over the years,
one thing that hasn't is the tradition of brewing fine beer
using the local limestone water. This lasting legacy continues
with the newest entrée in the market, Kentucky Ale
from Alltech's Lexington Brewery Company.

| Early
brewers produced ales, porters and common table beers
in the English tradition of using top fermenting yeast.
This method produces robust beers with a degree of bitterness.

Since
it's inception over two hundred years ago Lexington
Brewery was no exception, putting forth a wide range
of beers including traditional "alt" or old
German formulas, ales and porters and German style lager.
During
a 1906 interview the owner attributed the success of
the brewery to the "splendid quality of the beer
and the limestone water, which had proved the best for
making the famous Kentucky whiskies the finest on earth,
is also the best to be used in brewing beers."

Today,
the brewery is independently owned and operated by Alltech,
a major supplier of yeast worldwide. Company President
Dr. Pearse Lyons is a yeast biochemist. Formerly of Dublin,
he put his way through school first by working for the
makers of Guinness, Ireland's most famous export, then
by helping to develop Irish Whiskies. |

Lyons founded Alltech in Lexington in 1980. Today, the
brewery gives him the opportunity to see where the company's
yeast and other brewing products work - at brewery level.
